Banana Peanut Butter Muffins

    Continuing the cooking with mom on Sundays series, here is a flashback to something we tried in October. They are vegan, flourless and refined sugar free – amazing!

    You will need:
    -1/2 cup oats or quinoa flakes
    -3/4 tsp baking powder
    -1/4 tsp salt
    -1/8 tsp baking soda
    -1 medium mashed banana
    -1 can white beans
    -1/4 cup peanut butter
    -1/4 cup maple syrup or honey
    -2 tsp pure vanilla extract
    -optional: mini chocolate chips
