    Avocado Chocolate Cupcakes

    My mom and dad recently found this recipe, which we slightly tweaked and made for Easter. If I didn’t bake it myself, I would have never guessed it has avocado as a main ingredient.

    The straightforward recipe calls for honey instead of refined sugar. I think everyone was surprised with how closely the cupcakes both tasted like and resembled actual chocolate cake. One side note: they’re not low in calories.

    Makes a cake or about 11 cupcakes
    *Mix together and cook 20-30 min @ 350
    -2 large avocados
    -4 eggs
    -1 cup unsweetened cocoa powder
    -1 cup honey
    -1 cup almond flour
    -1/2 tsp salt
    -1/2 tsp baking soda
    -1/2 tsp baking powder
    -1 1/2 tsp vanilla

    Icing
    *Mix together and put in the fridge for 30 minutes
    -1 large avocado
    -2 tablespoons coconut oil
    -1 cup unsweetened cocoa powder
    -1/2 cup honey
